Santouka hails from Hokkaido, started in the 1980s with just shio ramen, with a seating of just 9 pax. Ramen Santouka has expanded overseas to Singapore and even the states. Ramen Santouka has quickly become a wildly popular ramen option famed for it’s tooiniku (pork cheek) that is extremely tender, and succulent in juices. The pork cheek is has a perfect balance of lean meat and fat.

First up, let’s try the Roast Beef Ae-Soba $17++.
Beautifully plated with roast beef slices adorned with pinkish centers, served on a bed of soba noodles and an onsen egg. The light sesame sauce brings a sweet and yet slightly tangy flavour to the roast beef slices.
The soba noodles were served with a generous portion of greens, and for those who aren’t soup lovers, this would be the noodle dish for you. The curly and springy soba noodles were delicate to bite into and yet retains the flavours from the wasabi sauce.
Next, I tried their Santouka Tantan Men. Rich sesame and meat miso taste that complements the moderately hot tonkotsu broth.
If you’re looking for a bowl of ramen that is full of meaty flavour, this is it. It comes with a intriguingly smoky aroma. The ramen noodles were delicate and gently soaked up the mellow and yet deep tonkotsu broth.
What makes it more alluring is the chilli oil added to the broth, along with the seasoned minced pork. This gives the broth a tinge of lingering sweetness.
Next up, we have the signature Pork Cheek Ramen. The broth maketh ramen, and at Santouka there’s 4 options, Shio (salt), Shoyu (Soy Sauce, Miso, and Kara Miso (Spicy Miso). My personal favourite is Shoyu!
The ramen noodles are medium sized which gives it enough bite and bounce. Love the springiness of it. I’m not a huge fan of yellow noodles because they have that alkaline taste but this is alright.
Overall : I liked the two new menu additions to Santouka and I’ll definitely be back for more tan tan men goodness! With 2 central locations, Santouka Ramen remains as one of my top options for ramen in Singapore. The pork cheek goodness cannot be replicated elsewhere, not to mention with their additional Tan Tan Men and Roast Beef Ae-Soba, Santouka is keeping up with the Singaporean tastebuds that are ever changing.
